Straight after finishing his Global Academy Professional Culinary Arts course, EJ Mejia worked as Commis at the Shangri-La Hotel in Makati. Some years after, he became Junior Chef of Royal Caribbean Cruises, USA - voted Best Cruise Line Overall by Travel weekly for 21 consecutive years.


He then moved to New Zealand, working as Chef de Partie of Malt House Fusion, known for its unique fusion cuisine combining traditional flavors with modern culinary techniques.


He presently is Sous Chef of Delaware North in Auckland, New Zealand, one of the largest privately-owned hospitality and entertainment companies in the world.
